150 g/ 5oz/ 10 tbsp butter, softened
115 g/ 4oz/ 1/2 cup caster sugar
1 egg yolk
2.5 ml/ 1/2 tsp almond essence
115 g/ 4oz/ 1 cup ground almonds
175 g/ 6oz/ 1 1/2 cups plain flour
50 g/ 2 oz plain chocolate (instead of plain I use cadbery choc..hehe)
- cream the butter and sugar together with mixer until light and fluffy, then beat in the egg yolk, almond essence, ground almonds and flour until evenly mixed. Chill until firm, for about 2 hours.
- preheat the oven to 160 degree C.
- break off small pieces of dough and roll into balls with hands. Spacing them out as they will spread in the oven.
- bake the biscuit for 20mins or until golden (I only bake for 7-10 mins). Leave the biscuit to cool.
- melt the choc in a bowl over a pan of hot water. Sandwich the biscuits in pair, with melted choc. Leave to cool and set before serving...kihkihkih
